  • 2 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegan mini marshmallows
  • 1/2 cup semi-sweet chocolate chips or chunks

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix almond butter, brown sugar, pumpkin puree, vanilla extract, and egg until combined.
  3. In another bowl, whisk together almond flour, pumpkin pie spice, baking soda, and salt. Gradually add this mixture to the wet ingredients until fully combined. Fold in chocolate chips.
  4. Scoop batter onto the prepared baking sheet and place vegan marshmallows on top of each scoop.
  5. Bake for 10-12 minutes until golden brown. Let cool before serving.
