  • 1 cup whole milk
  • 6 tablespoons butter
  • 2 cups granulated sugar
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon vanilla extract
  • 10 ounces frozen raspberries (thawed)
  • 2 cups desiccated coconut

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, whisk eggs until frothy. Add milk, melted butter, sugar, vanilla, baking powder, salt, and flour; mix until smooth.
  2. Pour batter into a greased baking pan and bake for about 40 minutes or until golden brown. Let it cool completely.
  3. For the raspberry glaze, combine thawed raspberries with water and sugar in a saucepan over medium heat until simmering. Dissolve vegan gelatin in remaining water before adding it to the mixture; stir until slightly thickened.
  4. Cut cooled sponge cake into squares; dip each into raspberry glaze and roll in coconut to coat fully.
  5. Serve on a platter and enjoy!
