  • 2 cups chopped cucumbers (unpeeled)
  • 2 cups chopped sweet peppers (any color)
  • 2 cups chopped zucchini
  • 1 cup chopped onion
  • 4 cups chopped seeded peeled tomatoes
  • 3 cups white vinegar
  • 1 tablespoon mustard seeds
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon ground cloves
  • 2 cups granulated sugar

Instructions

  1. The night before making the relish, dice cucumbers, zucchini, onion, and peppers. Soak them in a large bowl of water with 1/4 cup pickling salt.
  2. Drain and rinse the vegetables thoroughly the next day, squeezing out excess moisture.
  3. Chop tomatoes into small pieces and remove seeds.
  4. In a saucepan, combine tomatoes, vinegar, mustard seeds, turmeric, cinnamon, allspice, and ground cloves. Bring to a boil while stirring frequently.
  5. Reduce heat and simmer for about 30 minutes until thickened.
  6. Add sugar and drained vegetables; bring back to a boil and simmer for an additional 20 minutes.
  7. Fill sterilized jars with hot relish mixture and process in a water bath for about 15 minutes.
