  • 1/2 cup chia seeds
  • 1/4 cup maple syrup or agave nectar
  • Zest and juice of 1 large lime
  • 1 teaspoon vanilla extract
  • Optional crust: 1 cup almonds or cashews
  • 1/2 cup shredded coconut
  • 1/4 cup pitted Medjool dates
  • 1 tablespoon melted coconut oil

Instructions

  1. If using a crust, blend the optional crust ingredients in a food processor until sticky. Press into an 8×8 inch pan lined with parchment paper and chill.
  2. In a bowl, whisk together coconut milk, chia seeds, maple syrup or agave nectar, lime zest, lime juice, vanilla extract, and salt.
  3. Let sit for 5–10 minutes to thicken, whisking again to ensure even distribution.
  4. Pour the mixture over the chilled crust (or directly into the pan if not using a crust) and spread evenly.
  5. Cover and refrigerate for at least 4 hours or overnight until firm.
  6. Top with toasted coconut flakes and extra lime zest before slicing into bars.
