  • 1 head garlic

  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse and dry cherry tomatoes; place in a large bowl.
  3. Slice off the top of the garlic head to expose cloves.
  4. Drizzle cherry tomatoes with 2 tablespoons olive oil; season with salt, pepper, and red pepper flakes (if using), then toss.
  5. Line a baking sheet with parchment paper; spread seasoned tomatoes in a single layer and place garlic cut side up on the sheet. Drizzle remaining olive oil over garlic.
  6. Roast for 25-30 minutes until tomatoes are blistered and garlic is soft.
  7. Meanwhile, boil salted water in a large pot; cook pasta according to package instructions until al dente.
  8. Reserve about 1 cup pasta cooking water before draining; keep pasta warm without rinsing.
  9. Once roasted, let tomatoes and garlic cool slightly; squeeze roasted garlic cloves into a large bowl.
  10. Mash together roasted tomatoes and garlic until combined; stir in remaining olive oil and adjust seasoning if needed.
  11. Toss cooked pasta with tomato mixture, adding reserved pasta water as necessary for desired consistency.
  12. Fold in fresh basil just before serving.
