  • 6 beef sausages
  • 1 large white onion, diced
  • 2 medium carrots, diced
  • 2 cloves of garlic, finely diced
  • 400g baby potatoes, sliced
  • 480ml beef stock
  • 3 tbsp butter
  • 3 tbsp plain flour
  • Seasonings: dried rosemary, dried thyme, black pepper

Instructions

  1. In a large frying pan, cook the turkey bacon until crisp; set aside. In the same pan, brown the beef sausages and slice them into pieces.
  2. Sauté diced onion and carrots until softened. Add garlic and melted butter; stir in flour to create a roux.
  3. Gradually add beef stock while stirring to prevent lumps. Mix in Worcestershire sauce, herbs, mustard, sausage pieces, and turkey bacon.
  4. Pour mixture into a baking dish; let sit for 15 minutes.
  5. Preheat oven to 180°C (350°F). Layer thinly sliced baby potatoes on top; brush with melted butter and season.
  6. Bake covered for 30 minutes, then uncover and increase temperature to 200°C (400°F), cooking an additional 20 minutes until potatoes are tender.
