  • 2 medium zucchini, cubed
  • 1 onion, cut into ¾-inch pieces
  • 1 bell pepper, cut into ¾-inch pieces
  • 4 fully cooked chicken or turkey sausages, sliced into ¼-inch circles
  • 2 ½ tbsp olive or avocado oil
  • 1 tsp garlic (minced)
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  2. Add chopped sausages and sauté until browned. Remove and set aside.
  3. In the same skillet, add another 1½ tablespoons of oil followed by zucchini, onion, and bell pepper along with seasonings. Stir well.
  4. Cook until onions are translucent and vegetables are tender (about 5 minutes).
  5. Return the sausages to the skillet and add minced garlic. Stir well to combine all ingredients and let flavors meld together for a couple of minutes.
