  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp tomato paste
  • Salt and pepper to taste

Instructions

  2. In your slow cooker, combine chicken, carrots, potatoes, celery, onion, and garlic.
  3. Season with thyme, rosemary, salt, pepper; add tomato paste and chicken broth.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours until everything is tender.
  5. If desired, thicken stew with flour mixed with water during the last 30 minutes.
  6. Stir in frozen peas during the last 15 minutes of cooking.
