Ingredients

  • 6 large eggs
  • 2 tbsp mayonnaise
  • 1 tbsp spicy brown mustard
  • 3 drops red food dye (or beet juice)
  • Salt & pepper to taste
  • 12 medium cocktail olives (with pimentos)
  • 3 slices white bread (or 12 rice crackers)

Instructions

  1. Preheat the oven to 350 F (175 C) if using bread; skip if using rice crackers.
  2. In a pot of cool water, place the eggs and bring to boil for 20 minutes.
  3. Transfer the boiled eggs to cold water for 2-5 minutes, then peel.
  4. Slice each egg in half, remove yolks and push them through a mesh strainer into a bowl.
  5. Mix strained yolks with mayonnaise, mustard, salt, pepper, and red dye until creamy.
  6. Prepare bread circles or use rice crackers as bases if desired.
  7. Create olive-sized holes in egg halves, fill with yolk mixture, and top with olives.
