  • 1 ½ pounds mini potatoes (red mini creamer or similar)
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked or regular)
  • ½ teaspoon black pepper
  • Fresh or dried parsley flakes for garnish

Instructions

  1. Preheat the oven to 385°F.
  2. Line a baking sheet with parchment paper.
  3. Wash the mini potatoes under cold water and set aside to dry.
  4. Carve skull faces into each potato using a paring knife, placing carved potatoes in lemon water to prevent browning.
  5. In a bowl, mix olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper.
  6. Drain the carved potatoes and toss them in the seasoning mixture until evenly coated.
  7. Place seasoned potatoes face side up on the prepared baking sheet and bake for about 30 minutes or until golden brown and tender.
  8. Garnish with parsley flakes before serving.
