  • 1 ⅔ cups sugar
  • 2 eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 3 cups diced & peeled apples (about 2 large apples)
  • Optional: ¼ cup chopped pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, combine flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time and stir in vanilla.
  4. Gradually mix dry ingredients into the wet mixture until just combined. Fold in diced apples and nuts if using.
  5. Pour batter into the prepared pan and bake for 35 to 40 minutes until golden brown.
  6. Prepare caramel sauce by combining brown sugar, half & half, and butter in a saucepan over medium-low heat until smooth.
  7. Drizzle warm caramel over the baked cake and return to oven for an additional 10 to 15 minutes.
  8. Allow cooling for about 15 minutes before serving.
