  • 2 cups fresh apple cider
  • 2 cups chicken broth
  • 2 tbsp dijon mustard
  • 1 tbsp dried minced onion
  • 1 head garlic
  • 3 rosemary sprigs
  • 4 thyme sprigs
  • 1 red onion, cut into thick rounds
  • 2 firm, slightly tart apples, peeled and cut into wedges
  • 2 tbsp neutral cooking oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Sear the seasoned beef shoulder in oil until browned on all sides. Set aside.
  2. In the same pot, soften sliced red onion, followed by adding garlic, dried minced onion, rosemary, and thyme.
  3. Deglaze with apple cider and chicken broth, adding dijon mustard.
  4. Return the beef along with apple wedges to the pot, cover, and simmer on low heat for 3-4 hours until tender.
  5. Let rest before slicing and serve warm with braising liquid.
