  • 8 cups romaine lettuce (chopped)
  • 1 cup corn kernels
  • 1 can black beans (drained and rinsed)
  • 2 Roma tomatoes (diced)
  • 4 green onions (sliced)
  • 1/2 cup shredded mild cheddar cheese
  • 1/4 cup chopped cilantro
  • Juice of 1/2 lime
  • 1 cup ranch dressing
  • 2 tablespoons mild taco seasoning
  • Salt and pepper to taste
  • 1 cup crushed tortilla chips

Instructions

  1. In a small bowl, whisk ranch dressing and taco seasoning until well combined. Chill in the fridge.
  2. Season chicken with salt and pepper; cook in a non-stick skillet over medium-high heat for about 12 minutes or until fully cooked.
  3. In a large mixing bowl, combine romaine lettuce, corn, black beans, tomatoes, green onions, cheese, cilantro, lime juice, and tortilla chips.
  4. Once the chicken has cooled slightly, add it to the salad mixture.
  5. Drizzle with dressing just before serving and toss gently to combine.
