  • 2 bags frozen peaches (20 ounces each)
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1 stick unsalted butter (cold and room temperature)
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/2 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 teaspoons cornstarch
  • 1 teaspoon cream of tartar
  • 2 tablespoons water
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar (to dust top of cobbler)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a greased 9×13 baking dish, combine frozen peaches, both sugars, vanilla extract, almond extract (optional), cinnamon, nutmeg, cornstarch, cream of tartar, butter, water, and lemon juice. Mix until well combined and bake covered for 20 minutes.
  3. Meanwhile, in another bowl, mix flour, both sugars, baking powder, salt, and half a tablespoon of cinnamon. Cut in cold butter until crumbly. Stir in boiling water until just combined.
  4. Remove the peaches from the oven and drop spoonfuls of the topping over them. Sprinkle remaining sugar and cinnamon on top.
  5. Bake uncovered for an additional 30-45 minutes or until the crust is golden brown.
