  • 1 vanilla bean
  • 220g cake flour
  • 200g granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • 1 teaspoon pure vanilla extract
  • 90g browned butter
  • 1 tablespoon canola oil or any flavorless oil
  • 3 large eggs
  • 160g buttermilk (or kefir)
  • 200g remaining brown butter
  • 113g cream cheese at room temperature (or 60g sour cream)
  • 360g powdered sugar
  • ½ teaspoon fine sea salt

Instructions

  1. Start by browning 339g of unsalted butter in a saucepan over medium heat until golden brown.
  2. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  3. In one bowl, whisk together 220g cake flour, 2 teaspoons baking powder, and ½ teaspoon fine sea salt.
  4. In another bowl, beat together the cooled browned butter and 200g granulated sugar until light and fluffy.
  5. Add 3 large eggs one at a time, followed by 1 teaspoon pure vanilla extract.
  6. Gradually combine the dry ingredients with 160g buttermilk alternately until just mixed.
  7. Fill cupcake liners two-thirds full with batter and bake for 20–25 minutes until a toothpick comes out clean.
  8. Cool before frosting with the prepared mixture of remaining browned butter, cream cheese (or sour cream), powdered sugar, sea salt, and vanilla extract.
