  • 1 cup whole milk
  • 1 egg
  • 1 1/2 cups shredded cheese (cheddar blend or mozzarella)
  • 1/4 cup sliced scallions

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Shred the zucchini with a cheese grater, then drain it in a colander sprinkled with salt for about 15 minutes to remove excess moisture.
  3. In a mixing bowl, whisk together flour, baking powder, salt, black pepper, garlic powder, and red pepper if using.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. In another bowl, whisk the egg and milk together before adding in the drained zucchini, cheese, and scallions.
  6. Combine the wet mixture with the dry ingredients until just mixed; avoid overmixing.
  7. Use an ice cream scoop to drop dough portions onto the prepared baking sheet about 2 inches apart.
  8. Bake for approximately 20 minutes or until golden brown on top.
