  • 2 cups shredded zucchini (squeezed)
  • 1 cup Panko bread crumbs
  • 2 eggs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup shredded Mozzarella cheese
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • 3 tbsp canola oil (for cooking)

Instructions

  1. Grate the zucchini using a box grater, then squeeze out excess moisture using a mesh bag or cheese cloth.
  2. In a mixing bowl, combine squeezed zucchini, Panko bread crumbs, eggs, Parmesan cheese, Mozzarella cheese, minced garlic, salt, and pepper. Mix until well combined.
  3. Preheat a cooking pan over medium heat and add canola oil.
  4. Use an ice cream scoop to portion and shape the mixture into fritters before placing them in the hot pan.
  5. Cook each fritter for 4-6 minutes on each side until golden brown. Flip only once for best results.
  6. If frying multiple batches, add additional oil as needed.
